Hand stripping is where you literally pull the dead hair out allowing for new growth to come through helping to keep the richer colours and correct coat textures especially in wire coated breeds, some spaniels can also be stripped.

Not just for the show dogs, any pet dog can be stripped , they can usually go slightly longer inbetween grooming visits compared to their clipped counterparts.

But as a more skilled service this comes with a higher cost, this is done with fingers and hands (scissors) and not clippers so can take longer than a clip depending on breed.
